Turmeric Lentil Soup with Coconut Milk

Ingredients needed:

– Two cups red lentils

– One and a half cup coconut milk

– One teaspoon cumin

– One and a half teaspoon cinnamon

– One teaspoon salt

Directions:

-Rinse the red lentils with cold water. Allow draining.

-Melt the coconut oil in a pot and sauté the onions until they become soft and golden.

-Add the apples and turmeric and cook for two minutes. Stir frequently.

-Add the lentils and 2 cups of water. Then bring the pot to a boil. Simmer for 15 minutes, covered.

-Add the spices and coconut milk and mix well.

-Simmer until the lentils are soft. If you prefer a thinner consistency, add another cup of water -Simmer for at least two hours.

-Serve warm, garnish it with pumpkin seeds or coconut shavings.
